BBQ season is here and Chef Lane loves to serve this spicy dry rub in La Plazuela. Sometimes he features wild boar with the rub, but if you don’t happen to have a wild boar running around in your area of the country, then a store-bought pork tenderloin will work just fine for this recipe! This mixture of salt, pepper, spices, and sugar cures the meat before cooking and flavors it while it's on the fire, mingling with the juices to form an ambrosial crust.
